Winter is really setting in here in the north! The other morning it was spectacular with the mist rising from the lake and the trees covered in bits of ice.
Soon the lake will be covered in ice so thick that we can drive on it.

Here's another semi raw recipe that I made a few weeks ago and am totally love in. Yup, still on my pumpkin spree and still so many more recipes for me to share. I WILL get around to it, lol. This is a super easy recipe to throw together and makes a great afternoon treat when you need something in a pinch!
Pumpkin Lucuma Fudge
1/2 cup cooked pumpkin puree
6 tablespoons almond butter
4 tablespoons lucuma
2 tablespoons + 2 teaspoons maple syrup
1/2- 3/4 teaspoon cinnamon, or to taste
6 tablespoons melted coconut butter
4 tablespoons melted coconut oil
Make sure all ingredients are room temperature.
Stir together all but the coconut butter and oil together, then add them and stir in to incorporate.
Press the mixture into the bottom of a plastic wrap lined container (container size will determine how thick or thin the fudge will be).
Chill in the fridge for at least 4 hours. Slice.
And look who landed on my doorstep last week?! The one and only Hannah of Wayfaring Chocolate. I took her to see the horses yesterday. Isn't this mini horse adorable?! More on our visit in another post ;)
On another note, I've had a few yoga suggestions that I will definitely be taking into account like doing yoga videos (some time in the future), and suggesting dvds that I think are worthwhile. I've got lots of things I want to share and will be doing so soon! Stay tuned.

DeleteYou're a bit ahead of us - north of here the lakes are half frozen too but luckily ours is still open. I prefer open water.

ReplyDeleteYes, the only lucuma we can get here in north america is the powdered version - i have yet to try it fresh but have to travel to south america for that - one day! :)

DeleteI really like lucuma, but I'm allergic.... :-( Your fudge sounds great though! I've always loved the idea of a fire pit! We had one at our old house, but never used it....AZ is not exactly the place for one. :-)

DeleteHello, I found my way here from Wayfaring Chocolate, I was just reading about Hannah's lovely visit with you, and seeing the delicious foods- this one really appeals- I love pumpkin in any form though. It might take some doing to get lucuma powder in rural Australia, but I will try..... Coconut butter is that from the supermarket fridge section? I'm not sure that we have any other version here. Is that cocoa nibs you've sprinkled on top?
ReplyDeleteHi Louise, the lucuma powder is essential for the recipe - its too unique to be substituted, but you can order it online in Australia. The coconut butter is simply shredded coconut ground down into a smooth butter that is hard at room temperature (or soft for your warm Australian temps). You can find it at health food stores. Yup cacao nibs on top!
ReplyDeleteThanks for your tips Heather. I did just find out about coconut butter from a new book I bought this week too (I Quit Sugar), I love synchronicity like that. So I've bought some coconut to make the butter. I'll check out the local health food store for lucuma powder, although I'm on a diet and really shouldn't be contemplating fudge even if it is vegan, and more healthy than traditional fudge. It does look too tempting though. I'm going to have to make it.

ReplyDeleteUnfortunately there isn't a sub. The lucuma gives a distinct taste, adds sweetness, and since its a powder it helps the fudge firm up. You can get it at whole foods and many health food stores :)

DeleteOrganic lucuma powder is a lightly sweet fruit which can be used to fill pastries and truffles. This product is very good and has great taste.
